Egg-Free, Dairy-Free Pancakes with Mooala Banana Milk (Make-Ahead Mix)

As an allergy mom, pancakes used to be one of those breakfasts I couldn’t just grab off the shelf. My daughter is allergic to milk and eggs, so most boxed mixes are out. This make-ahead egg-free, dairy-free pancake mix became our go-to. I stir up a big jar of the dry mix, and on busy mornings I just scoop out a cup and add the wet ingredients.

The secret is the Mooala Organic Banana Milk from Costco. It makes these pancakes slightly sweet with a mild banana flavor that’s so good with maple syrup.

Allergens: Contains: wheat. Free of: dairy, egg, peanuts, tree nuts, as long as your brands are. Check the labels on the banana milk and baking powder.

🍌 Our secret ingredient: Mooala Organic Banana Milk (from Costco)

I buy Mooala Organic Banana Milk at Costco, and it’s what makes these pancakes taste special. It adds natural sweetness and a mild banana flavor with no dairy. Always check the label on your carton for allergens and “may contain” warnings, since formulas can change.

Why We Love This Pancake Mix

  • Make-ahead dry mix. One jar makes about 4 batches, so breakfast is quick.
  • No eggs, no dairy. Safe for our milk- and egg-allergic kiddo, with no nut ingredients.
  • Mooala Banana Milk flavor. Slightly sweet with a mild banana taste, perfect with maple syrup.

Getting the Batter Just Right

Let the batter rest for 5 minutes before cooking. It should be thick but pourable. If it’s too stiff, add banana milk 1 tablespoon at a time. If it’s too thin, add 1 to 2 tablespoons of the dry mix.

A quick note on photos: I’ve been perfecting these recipes for years, but I never published them because photographing everything takes so much time. As a busy working, homeschooling mom, I decided it was more important to get them out there to help other allergy families. So many of the photos here are AI-generated to show what the dish looks like, but the recipes themselves are real, made in my kitchen and tested on my family.
