Crispy Baked Dairy-Free Chicken Tenders (Egg-Free Panko Recipe)

Written by

·

These crispy baked dairy-free chicken tenders are made without eggs, milk, or butter, and they still come out golden and crunchy. The trick is a simple plant-based “buttermilk” soak (unsweetened rice milk with a splash of lemon juice) that helps a seasoned panko coating stick, so you don’t need an egg wash. They bake on a wire rack in the oven, and there’s an air fryer version too for busy weeknights.

Why You’ll Love These Dairy-Free Chicken Tenders

  • No egg wash: The rice milk soak (or a quick flour-and-water batter) does the job.
  • Baked, not fried: A wire rack and a light spray of oil give you crunch without a pot of oil.
  • Kid-friendly: A classic chicken tender dinner the whole table can share.
  • Easy to adapt: Gluten-free and air fryer options below.

Are These Chicken Tenders Allergy-Friendly?

  • Dairy-free: Rice milk replaces buttermilk, and nutritional yeast adds an optional savory, “cheesy” note.
  • Egg-free: No egg wash or mayo.
  • Nut-free: No nuts in the recipe. Some panko and some plant milks are made in shared facilities, so check the labels.
  • Contains wheat unless you use certified gluten-free panko.

What You’ll Need

  • A rimmed baking sheet with an oven-safe wire cooling rack
  • An instant-read meat thermometer (the easiest way to know they’re done)
  • An olive oil sprayer or mister
  • A food processor or blender for the panko mix (optional)
  • An air fryer, if you’d like the faster version

Ingredient Notes

  • Chicken: Boneless, skinless breasts cut into 1-inch strips, or tenderloins.
  • Rice milk: Any plain, unsweetened plant milk your family tolerates works.
  • Lemon juice or apple cider vinegar: The acid makes a dairy-free “buttermilk” that helps tenderize the chicken.
  • Panko: Lighter and crunchier than regular breadcrumbs.
  • Nutritional yeast: Optional, but it adds lots of savory depth.

How to Make Chicken Tenders Without Eggs

1. Soak. Whisk the rice milk and lemon juice, add the chicken, and refrigerate at least 1 hour or up to overnight.

2. Season the panko. Pulse the panko with the nutritional yeast and spices a few times. Keep it coarse.

3. Coat. Let excess soak drip off, then press each strip firmly into the crumbs. Set the strips on the rack so they don’t touch.

4. Bake. Spray lightly with oil and bake at 400°F until golden and the thickest piece reaches 165°F inside.

Prep Time 25 minutes
Cook Time 30 minutes
Soak (minimum) 1 hour
Total Time 1 hour 55 minutes
Servings: 4 servings

Ingredients

Chicken and soak
  • 1 lb boneless, skinless chicken breasts or tenderloins cut into 1-inch strips
  • 1 cup unsweetened rice milk or any plain unsweetened dairy-free milk
  • 1 tablespoon lemon juice or apple cider vinegar
Panko coating
  • 1 1/2 cups panko breadcrumbs check label for milk and egg
  • 3 tablespoons nutritional yeast optional
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon sea salt or to taste
For baking
  • olive oil spray or a light drizzle of oil

Method

  1. Make the soak: whisk the rice milk and lemon juice in a shallow bowl or zip-top bag. Add the chicken strips so they’re submerged. Cover and refrigerate at least 1 hour, or up to overnight.
  2. Prep the coating: pulse the panko, nutritional yeast (if using), garlic powder, onion powder, pepper, and salt a few times in a blender or food processor until mixed but still coarse. Transfer to a shallow bowl.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with foil and set a wire rack on top (or lightly grease the sheet).
  4. Lift the chicken out of the soak and let the excess drip off. Dredge a few pieces at a time in the panko, pressing firmly so the crumbs stick. Arrange in a single layer, not touching.
  5. Lightly spray or drizzle the tops with oil. Bake 20 to 30 minutes, flipping halfway if you like, until golden and the thickest piece reaches 165°F (74°C).
  6. Rest a few minutes before serving.

Notes

Air fryer variation: Skip the long soak. Season the chicken directly with half the spices. Whisk 1/2 cup all-purpose flour (or gluten-free flour) with 1/2 cup water into a smooth batter, dip the chicken, then press into the seasoned panko. Air fry at 400°F in a single layer, in batches, 10 to 12 minutes total, flipping halfway and spraying with oil, until 165°F inside.

Air Fryer Dairy-Free Chicken Tenders

Short on time? Skip the long soak. Season the chicken with half the spices, whisk 1/2 cup all-purpose flour (or gluten-free flour) with 1/2 cup water into a smooth batter, dip the chicken, then press it into the seasoned panko. Air fry at 400°F in a single layer, in batches, for about 10 to 12 minutes, flipping halfway and spraying with oil, until the chicken reaches 165°F inside.

Tips for Extra-Crispy Tenders

  • Use a wire rack so air circulates and the bottoms don’t steam.
  • Don’t crowd the pan. Leave space between strips.
  • Press the crumbs on firmly so the coating stays put.
  • Add flavor: Paprika, Italian herbs, or a pinch of cayenne in the panko.
  • Always check the temperature. Chicken is safe at 165°F.

What to Serve with Chicken Tenders

Ketchup, BBQ sauce, or honey mustard are classic dips. Check labels, since some sauces contain egg or dairy. Serve with fries, roasted veggies, or a salad, or tuck the tenders into wraps. For more weeknight dinners, try my stuffed peppers without cheese or slow cooker chuck roast.

Storing and Reheating

Leftovers keep in the fridge for 3 to 4 days. Reheat in a 375°F oven or the air fryer to bring back the crunch. The microwave makes them soggy.

Dairy-Free Chicken Tenders FAQ

How do you get breadcrumbs to stick without egg?

Soak the chicken in plant milk with lemon juice, or dip it in a flour-and-water batter, then press the crumbs on firmly.

Can I make these chicken tenders gluten-free?

Yes. Use certified gluten-free panko, plus gluten-free flour if you’re making the batter version.

How long do you bake chicken tenders at 400°F?

Usually about 20 to 30 minutes, depending on thickness. The internal temperature (165°F) matters more than the clock.

Can I make them ahead?

You can soak the chicken overnight. Cooked tenders reheat well in the oven or air fryer.

Is panko dairy-free?

Many plain panko brands are, but some contain milk or are made in shared facilities. Always read the label.

Allergy note: I write these recipes with allergy families in mind, but every allergy is different. Always check labels on every product, every time, for allergens and cross-contamination (“may contain” or shared-facility) warnings, since formulations change. When in doubt, check with your allergist.
