Cook Time 15 minutes
Total Time 30 minutes
Servings: 6 pancakes (1 batch)

Ingredients

Dry mix (make ahead, store airtight; makes about 4 batches)
  • 4 cups all-purpose flour
  • 1/3 cup sugar
  • 1/4 cup baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
One batch (about 6 pancakes)
  • 1 cup dry mix
  • 3/4 cup Mooala Organic Banana Milk
  • 1 tablespoon distilled white vinegar (5% acidity) or lemon juice
  • 2 tablespoons oil
  • 1 teaspoon vanilla (optional)

Method

  1. Make the dry mix: whisk the flour, sugar, baking powder, baking soda, and salt together and store in an airtight container.
  2. Stir the distilled white vinegar into the banana milk and let it sit for 5 minutes.
  3. Add the oil and vanilla.
  4. Pour into the dry mix and stir just until combined. A few lumps are fine.
  5. Let the batter rest for 5 minutes. It should be thick but pourable. If it's too stiff, add banana milk 1 tablespoon at a time. If it's too thin, add 1 to 2 tablespoons of dry mix.
  6. Heat a lightly oiled pan or griddle over medium heat. Pour about 1/4 cup of batter per pancake. Cook until bubbles form and the edges look set, then flip and cook until golden.

Notes

  • The banana milk gives these a mild banana flavor that's great with maple syrup.
  • Allergens: Contains wheat. Free of dairy, egg, peanuts, and tree nuts, as long as your brands are. Check the labels on the banana milk and baking powder.
